    First Bike Ride in 9 Months

    Today was the first time I took my bike out in almost 9 months! The last time I rode was the Tour de Habitat back in September. I keep telling myself I’m going to ride, but never do! Today I finally did. Chris and I took a little ride throughout Albany, it was really fun and quite the workout! We made a stop at Buckingham Pond and saw lots of ducks and geese.     Summer Recipes

    After two years of blogging, I have a small collection of my go-to recipes that I post every once in a while. I tried to find the best ones for summer–I’ll admit, I looked back on some of my old posts and was horrified at the photography (I’m still not that great at photographing food, but I think I’ve gotten a bit better since then.)     Veggie Pasta Casserole

    If you know me, you know I like really quick and easy dinners. The last thing I want to do when I get home from work and the gym is to spend time cooking dinner, especially when I’m starving!     My Favorite Way to Prepare Tofu

    I hate when people tell me they hate tofu because it has no flavor! Maybe I’ve just grown to love the taste of tofu, but there are ways to really make it taste good. It pretty much absorbs the flavor of whatever you cook it in. Did you know that a serving of tofu has only 5 grams of fat and 10 grams of protein? It is also a good source of vitamin K and calcium. I’ve baked tofu before, but that can take a long time. I guess I just like fast results, especially when I’m starving! I usually cook my tofu in a large pan on the stove…

    National Pancake Week!

    Last night for dinner I was craving pancakes. Usually I am way too lazy to make pancakes, even on the weekends, but I decided since it is in fact National Pancake Week, I would make some healthy pancakes for dinner! I picked up some Organic 7 Grain Pancake & Waffle Mix the other day at the store and made some healthy pancakes.
