Veggie Pasta Casserole

If you know me, you know I like really quick and easy dinners. The last thing I want to do when I get home from work and the gym is to spend time cooking dinner, especially when I’m starving! Lately I’ve been pre-making my dinners ahead of time on Sundays and reheating them up during the week. I’ve found some really healthy recipes to use including this Vegetable Polenta Bake and more recently, something my mom introduced me to, the veggie pasta casserole!

My mom made this for Chris and I when we got back from California. It worked out great and tasted delicious.

It is super easy to make, too.

Veggie Pasta Casserole

Ingredients

  • 1 box of vegetable pasta (whole wheat would work nice, too)
  • 1 jar of marinara sauce
  • 1 package of morning star farms meatless crumbles
  • part skim shredded mozzarella cheese

Instructions

Cook pasta according to package, about 10 minutes.

While pasta is cooking, spray skillet with non-stick spray. Heat up soy crumbled until warmed.

Add marinara sauce to crumbles until heated

When pasta is done, drain.

Add marinara & crumbles to pasta to baking dish and mix well

Top with shredded mozzarella cheese

Optional: Bake 20 minutes at 400 degrees

The good thing about this recipe is that you can make it ahead of time, keep it in the fridge and then bake it when you’re ready to serve it. I didn’t even bake it, just reheated one serving in the microwave when it came time for dinner!
