National Pancake Week!
Last night for dinner I was craving pancakes. Usually I am way too lazy to make pancakes, even on the weekends, but I decided since it is in fact National Pancake Week, I would make some healthy pancakes for dinner!
I picked up some Organic 7 Grain Pancake & Waffle Mix the other day at the store and made some healthy pancakes. I went by the instructions on the package but substituted the following ingredients:
- 1 egg for 1 flax egg (1 tbsp of ground flax with 2 tbsp of warm water)
- 1 tbsp of oil for 1 tbsp of unsweetened apple sauce
- 3/4 cup of cold milk for 3/4 cup of unsweetened almond milk
I also added:
- 1 tbsp of cinnamon
- 1/4 cup of sliced strawberries
These pancakes have 7 grams of protein and 6 grams of fiber per serving! They were thick and hearty and topped them with fresh strawberries and mixed berry jam. It was a nice change to have pancakes for dinner and I even had some left over for breakfast this morning!
Since its pancake week and all, what is your favorite pancake?
Mine would have to be whole wheat chocolate chip or apple cinnamon…maybe even banana chocolate chip! Actually, I’ve never had a pancake I didn’t like…

i love a pancake full of mix ins! chopped nuts, chocolate chips, coconut all added right to the batter. Then topped with sliced fruit [usually a banana] and a bit of maple syrup [the real stuff!] or occasionally pumpkin butter. YUMMMMMMMM.

I found this recipe back in August of 2010, and have kept the ingredients/instructions in a note on my blackberry so that I can make it easily whenever I’m in the mood for something quick & breakfasty!
