Say Goodbye to the Sun

Today is my last day in Florida. 🙁

I’m not excited to be returning to this:

But I AM excited to see Chris and all my friends that I’ve missed since I’ve been here!

This morning I got prepared to face the cold with a warm bowl of oats.

I usually make them with water, but this morning I made them with unsweetened almond milk. Does anyone else notice a difference in cooking (in the microwave) when using almond milk? It gives the oats a different texture and doesn’t absorb the liquid as well as water. I wonder why?

In the mix

  • 1/2 cup of oats
  • 1/2 cup unsweetened almond milk
  • 1/2 mashed banana
  • 1 TBSP of chunky peanut butter

    greetings from the tundra – it’s above freezing today!
    I haven’t tried oatmeal with almond milk – that’s a good idea.
    Regarding liquid amount – that must be something about the microwave. My directions for grits say to decrease the amount of water from 1 cup to 3/4 of a cup if you microwave them.
    I’ve never microwaved either oatmeal or grits, but I like to use a mixture of skim milk and water when I cook them.
