First of the CSA Vegetables

I mentioned a few months ago that Chris and I joined our first CSA – Community Supported Agriculture program – to get fresh locally grown vegetables delivered every week from June to October.

Well, this week the first box was delivered. We got radishes, lettuce, oregano, garlic, an asian saute mix of greens, and garlic scapes!

For dinner last night I decided to do something with the radishes.

I decided to roast them by first washing them, removing the roots and stems, then mixing them with olive oil and some balsamic vinegar, followed by roasting them in the oven for 15 minutes.

They came out okay–I realized after trying one I’m not much a fan of radishes! I have some leftover that I’m going to slice up and throw in a salad tonight for a dinner party I’m having!

I also sauteed up some of the Asian greens and mixed them with some scrambled eggs for dinner.

I’m really looking forward to seeing what else we get in the upcoming weeks! Trying new recipes for vegetables I’m not used to eating is a fun and exciting. Its also a great way to get more vegetables into my diet!
