First of the CSA Vegetables
I mentioned a few months ago that Chris and I joined our first CSA – Community Supported Agriculture program – to get fresh locally grown vegetables delivered every week from June to October. Well, this week the first box was delivered. We got radishes, lettuce, oregano, garlic, an asian saute mix of greens, and garlic scapes! For dinner last night I decided to do something with the radishes. I decided to roast them by first washing them, removing the roots and stems, then mixing them with olive oil and some balsamic vinegar, followed by roasting them in the oven for 15 minutes. Abundance of Greens
Today I picked up some fresh local grown vegetables from my co-worker’s CSA. She was out of town this weekend and asked if I would be interested. Of course!! Thanks, Kathy! Turnips Bok Choi Scallions Garlic Scapes Totsoi Swiss Chard Red & Green Lettuce The herb garden Now I’m swimming in greens! My sister and I came home and cleaned the turnips and made turnip crisps in the oven. Then we steamed the turnip greens and made a salad with a fresh Mediterranean dressing which included lemon juice, olive oil, pepper, and garlic. They were bitter but they are so good for you!
