Caramelized Onion, Feta and Zucchini Pizza

Otherwise known as random-ingredients-you-have-in-your-fridge pizza! The other night Chris and I were craving pizza, he had just played an intense game of soccer and I had ran 4.0 mile run around my new neighborhood for the first time since moving (hurray!), so we were both very hungry come dinnertime, which ended up being around 8:30PM. Late for me! Anyway, that’s how this pizza came about! I’m a huge fan of pre-making pizza dough and freezing it, and that’s what I did here–I make Jenna’s pizza dough since it’s pretty much the easiest thing to make on the planet. And if I can’t mess it up, that’s saying something. Caramelized Onion,…

    Secret Smoothie Ingredient

Okay, so maybe this ingredient isn’t a secret. But its new for me. I made the best smoothie yesterday morning for breakfast. What did I add different? I added strawberry juice! It made the smoothie a lot more flavorful and hid the taste of the brown rice protein, which I must say is more of an acquired taste. Its different. I had a bag of strawberries in my fridge that I had frozen earlier. After letting them defrost in my fridge for a few days, they turn to mush swimming in juice. Usually I just spoon them out and put them in my yogurt for my morning snack at work. But I…

    Strawberry White Chocolate Chip Cookies

They other day strawberries were on sale at Price Chopper for $5 for three pounds…so I stocked up. And then my mom went strawberry picking and gave me these. Needless to say, I am swimming in strawberries! But I’m not complaining because they are my favorite fruit. I wanted to bake something incorporating strawberries so I got down to business searching for recipes that included ingredients I had on hand. I ended up going with Anne’s chocolate chip cookies and modifying it a little bit. Strawberry White Chocolate Chip Cookies Adapted from These Ain’t Your Grandma’s Chocolate Chip Cookies by Anne P. Ingredients 3/4 C old fashioned rolled oats 1/2…

    The Perfect Smoothie

Somehow last night I ended up in a fifteen minute “just abs” class at the gym. I was  going to Body Pump, since I’ve been attending faithfully twice a week  for the past few weeks for my challenge. Apparently, there is a class right before Body Pump that focuses on ab work. Well, I was already in the room, so I was stuck.  Man, the ab work was hard! I think I did my crunches wrong because today I have a sore neck. I need to practice better crunch form. I think I’ll be going back! Not only will I now have some upper body strength, but maybe some core strength too!…
