Strawberry White Chocolate Chip Cookies
They other day strawberries were on sale at Price Chopper for $5 for three pounds…so I stocked up. And then my mom went strawberry picking and gave me these.
Needless to say, I am swimming in strawberries! But I’m not complaining because they are my favorite fruit.
I wanted to bake something incorporating strawberries so I got down to business searching for recipes that included ingredients I had on hand. I ended up going with Anne’s chocolate chip cookies and modifying it a little bit.
Strawberry White Chocolate Chip Cookies
Adapted from These Ain’t Your Grandma’s Chocolate Chip Cookies by Anne P.
Ingredients
- 3/4 C old fashioned rolled oats
- 1/2 C all purpose flour
- 1/2 C whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/4 C earth balance (vegan “butter”–it was all I had on hand)
- 1/4 C olive oil
- 1/3 C granulated sugar
- 1/3 C brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 C white chocolate chips
- 1 C of strawberries, hulled and sliced
Instructions
1. Preheat oven to 350.
2. Combine oats, flour, baking soda, and salt in medium bowl.
3. Beat Earth Balance in electric mixer until soft and fluffy.
4. Add oil, sugar, egg and vanilla until mixture is combined.
5. Add dry ingredients to wet mixture and stir until dough forms.
6. Fold in strawberries and white chocolate chips.
7. Spoon dough onto greased cookie sheet (or sheet lined with parchment paper) and bake for 15-17 minutes. (Make sure they are spread apart since I put mine too close together and they baked into each other.)
8. Enjoy!!!
These are so good! I had to have one (or two) fresh out of the oven.

Those look AWESOME! I can’t wait to try them! If I have strawberries that are going to go bad if I don’t eat them right then, I cut them up and boil them with about a half cup of water and a half cup of sugar. Boil it down into a delicious syrup for pancakes & waffles!

they turned to mush! Emily the expert baker, how do i get them to not turn to mush, bake them longer???

I would try baking them a few minutes longer, but definitely keep an eye on them. Usually my cookies are a slight golden-ish brown when I pull them out of the oven. They shouldn’t be too mushy when you take them out. Also, store them after they completely cool in a dry area… I’m guessing maybe the moisture from the strawberries made them a little bit mushy too!

Oh ,y goodness! I LOVE strawberries and would love to have as many as you do. You should (probably already did) put them in your oatmeal. If I had that many berries I would make a strawberry shortcake or a cobbler. Yumo!! Enjoy!
