What I Made With CSA Veggies

So, this week, with my abundance of greens from my co-worker’s Community Supported Agriculture program (otherwise known as a CSA) that she graciously let me pick up, I’ve eaten my fair share of leafy vegetables and I love it! I wish I had this many free veggies on a weekly basis. I have always wanted to participate in a CSA program, but the cost always prevented me from doing so. Chris and I decided we would love to do this next season so we are going to research farms and do it by splitting a share!

So far, with the veggies I’ve made some pretty delicious things:

Garlic scape pesto!

I think the last two meals were my favorite! Having all of these fresh veggies at my disposal really allowed me to get creative in the kitchen and I really loved it! I never would have bought swiss chard or tatsoi on my own! I’m definitely going to be taking more trips to the farmer’s market this summer to stock up on some of these greens again.

Still on the agenda: hummus with garlic scapes and some bok choy.

    I suggest you look into Denison Farm for next summer. We are in our fourth year with them. The quantity and quality of the veggies is nothing short of amazing! They have added options such as weekly egg, bread and fruit shares as well.
    I pick my share up in Guilderland but they have multiple pickup sites. Check out their website.
