What I Ate Wednesday

I’m hopping on the What I Ate Wednesday bandwagon because I don’t often share my daily eats with you all! This Wednesday will be different!

Breakfast

This morning I wasn’t sure if I wanted a smoothie or cereal. All summer I’ve been on a cereal kick but since the cold weather will be rolling in soon and the idea of drinking a smoothie will chill me to the bone, I went for it.

I usually have a standard smoothie recipe I use every time, but today I was feeling rebellious and changed it up a little bit. And it was sooo worth it!

Enter the peanut butter & banana smoothie (in a bowl!)

Ingredients

  • 1 C unsweetened almond milk
  • 1 scoop vanilla brown rice protein powder
  • 1/4 C raw old-fashioned oats
  • 1 frozen banana (sliced first then frozen)
  • 1 heaping spoonful of peanut butter

Toppings

Directions

  1. Put all ingredients in blender, almond milk first and then blend away!
  2. Top with LOVE and enjoy

This was such a tasty smoothie, but next time I might use less banana since it seemed to overpower the peanut butter taste. Still great, though.

Lunch

Lunch consisted of last night’s leftovers. I was ambitious yet again in the kitchen and decided to make some whole wheat pasta with vegetable pasta sauce, sautéed kale and tofu. There was also a side of green beans! I’ve been really trying to include more greens in my diet since lately they’ve been lacking. Today I had leftovers for lunch and it was delish.

There may have been a locally picked apple involved, too.

Dinner

Dinner today is tricky because I have class. On these days I pack a lunch for work and something to have for dinner on campus before class starts. Usually a sandwich is easier since I don’t have access to a microwave, so today’s dinner was an avocado and tofu sandwich on twelve grain bread from the farmer’s market. Easy, healthy and delicious.
