    My First Trail Run

    Today I finally got to go for a trail run! I was so happy! But I’ll get to that in a little bit… First, breakfast! I made another banana scramble.    This one was pretty tasty, I must say. I think each one I’ve made so far has tasted different. But all pretty good! After breakfast I snaked on some random things until my trail run at noon. Sue, Brendan and I drove to Thacher Park.     July Re-Cap

    I cannot believe it is already August 1st. June and July have flown by…and there is only a month left of summer. Wow. Anyway, Here’s my July Re-Cap for everyone. 🙂 Running Total for Month: 58.64 miles, and 10:03:01 total time recorded. This is a MAJOR decrease from my milage in June, where I ran a whopping 90.63 miles. Most of my running in June was because I was training for my first 15K.     Eggplant, Spinach and Goat Cheese Flatbread Pizza

    TGIF! All day I was thinking about what I was planning to make with this monster. I got this huge eggplant at the farmer’s market yesterday for $1.50. I have never cooked eggplant in my life! I’ve only eaten it out at restaurants or when other people have cooked it for me–never on my own. So I think it was time to give it a try. I wanted to make pizza tonight, so I went with Eggplant, Spinach, and Goat Cheese Flatbread pizza. 🙂 I cut up the eggplant into little triangles, and put them on the flatbread, along with cheese and some baby spinach.     Who’s Bad?

    Yesterday I had a super busy day! I started it off right though, with a another delicious banana scramble. This time, I kept it on the stove for a little bit longer, and it wasn’t as mushy! I love these things! My new favorite breakfast. Banana scramble with a side of fresh strawberries. Yum.     I kept lunch light yesterday with some Amy’s Lentil Vegetable  Soup. I love Amy’s soups so much!
