Local Food for Dinner

Yesterday we made out great with our CSA box, the weekly box of vegetables we get from Otter Hook Farms in Greenville.

In yesterday’s box:

  • Swiss chard
  • Basil
  • Sweet corn
  • Parsley
  • Tomatoes
  • Beans

So, when one has basil, one must make pesto! I made it before to put on pizza and it came out amazing. I used a slightly different recipe this time because I had no nuts on hand. It came out pretty good, although  I may have used a little bit too much garlic. At least Chris and I both like garlic. 🙂

For dinner we decided to cook some whole wheat pasta with the pesto, summer squash and topped with fresh tomato.

We also cooked up the sweet corn to have on the side.

The corn around here is amazing. I have memories as a kid eating it with dinner every summer. My mother would go down the street to the farm stand and pick some up. Its so good you don’t even need butter or salt on it, just eat it as is.

Chris cut up the tomatoes while I made the pesto and the pasta and squash cooked.

The squash came not from our CSA, but from one of my co-workers. It was tasty!

All together now!

And I even have leftovers for lunch today.
