Fun with the Food Processor
So, last weekend I made hummus for the football game. It turned out so good, I wanted to make it again for myself! I used a simple, fail proof recipe found on Serious Eats.
It came out creamy, the perfect texture for hummus! I think I like home made hummus better than the store kinds! This one is so good. You need to make it, stat!
I love dipping baby carrots or sliced peppers in hummus. Its so healthy too.

This morning I was debating on if I wanted a smoothie or oats for breakfast. Oats won!
In the mix:
- Bob’s red mill five grain hot cereal
- 2 TBSP of oat bran
- 1 TBSP of ground flax
- 1 TBSP of sunflower seed butter
- 1 TBSP of cherry butter
This bowl was particularly good this morning!
This afternoon I had my follow up doctor appointment for my hip. After running last night with zero pain while running (but slight pain after during stretching), I’m ready to get back to it. The appointment was short and sweet and the doctor pretty much told me to only run 1-2x a week, depends on how it feels. My problem is this: I have a weak gluteus muscle, which causes me to run with the incorrect gate, resulting in hip pain in the muscle. If it starts to flair up again, he said to take some more time off, which I am comfortable doing…until race time comes around that is. I’m going to play it by ear. I just know I am 100% set on running the Cherry Blossom 10 Mile race in DC that I signed up for (already paid).
My running plan will go as follows (I like lists):
- Run 2-3x a week with a “long” run on the weekend (when training)
- Continue yoga classes 2x a week
- Crosstrain at the gym on the days I’m not running with the Arc Trainer or Bike
- Do stretching exercises doctor gave me 2x a day, every day
- If the pain starts again while running STOP and rest it for a week
- Start going to PT if it continues to bother me four weeks from now
So we’ll see how that goes. I’m signed up for a lot of races this spring and summer, so I’m hoping for the best.

Since I left work early for my appointment, I had time to stop at the gym to get in a quick 30 minutes on the Arc Trainer followed by a few upper body weight machines.
I also had more time this afternoon to spend on dinner, so I whipped out the food processor again to attempt some black bean burgers I saw on Anne’s blog. Can you tell I love her recipes? 🙂
They were simple and quick to make. Although not too pretty!
They look more like a funny looking pancake.
They took a while to cook, and the inside still was a bit mushy but they had really good flavor! I ate one for dinner on a bed of spinach topped with a little bit of fresh avocado.
It still looks like a pancake!
For dessert I picked up some of my favorite ice cream ever. I really ONLY buy this ice cream and its comes out once a year! I had to treat myself!
Question: what’s your favorite ice cream? Mine is definitely Samoas Cookie. Yumm!

That hummus recipe looks so good! I’ve still been looking for a solid homemade recipe. I’ve tried a few but haven’t loved one yet. I can’t wait to give this one a try!

What about hummus for breakfast?! I used to do that a lot, stopping at Brueggers before work. Bagel, hummus, lettuce tomato, etc. I stopped doing that when they started charged separately for each veggie. The price of my favorite sandwich went up more than $2.
And I like my hummus a little chunky, not always smooth
