Back in the Running Game
Is everyone having a good Saturday?
Last night Chris and I made our weekly vegan meal (part of our green challenge). I realized that I eat vegan meals way more than once a week! Last night we made vegan eggplant parm by simply leaving out the cheese.
And we had a side salad!
This eggplant is amazing. And it makes making eggplant parm SO EASY!
We also utilized our other green challenge by drinking some New York wine with dinner!
Bully Hill is a really popular New York wine. And its pretty cheap too. This one was on the sweet side, just how I like it.

For breakfast this morning I finally took Chris to Jake Moon, my absolute favorite breakfast place.
Chris ordered the Ploughman’s Breakfast–Two homemade sausages, two bacon strips, two eggs, biscuits & home fries, and I got simple scrambled eggs, cinnamon raisin toast and a side of vegetarian sausage (no home fries!). I didn’t want to eat too much since I had a run planned with Melissa in a few hours! The veggie sausage was so good! I asked the server and she said the chef gets it at the co-op and she thinks its morning star farms..I need to pick some of that up! The toast was fantastic, as always. The home made fresh bread is one of my favorite things about Jake Moon. We were both very happy with our meals.
I also got a green tea, since I generally like to drink a cup before my runs.
After digesting, I met up with Melissa to go for a 4.0 mile run. We had originally planned on 5.0 but didn’t make it that far, and that’s okay. I was happy with 4.0! We finished 4.0 miles in about 42 minutes, not bad for chilly weather! Thanks for running with me Melissa! It’s so nice to have a running buddy. This was my first outside run since the 3.5 Miler on January 1st! I felt great during my run–I feel like I’m back in the game! 🙂
When I got home I warmed up and snacked on a pineapple Chobani.
And now I’m munching on Terra Vegetable Chips trying not to eat the whole bag. They are so good, and addictive! I think these may be my favorite chips!

I love Terra chips … I could eat half the bag in one sitting. but they’re healthy because they’re veggie chips … right? 😉

We have a bag of Terra chips in the house right now… so hard not to eat them all in one sitting! So good! Glad your run went well! I haven’t run in a few weeks because of the weather and I’m so missing it… I even had a dream about running a 10K last night. My brain must be trying to tell me to get back out there! Happy weekend 🙂
