    A Lazy Sunday

    Actually, I most of my Sunday was lazy…minus my eight mile run! I woke up  yesterday morning and had my Trader Joe’s goods on the brain. Especially the pumpkin butter. I had to have more TJ’s cinnamon raisin bread as well…so breakfast and pre-run fuel was cinnamon raisin toast, slathered with TJ’s almond butter and pumpkin butter, with a banana. I ended up taking the banana off, since for some reason the texture of a banana on toast has been bothering me. Weird? Yes.     Happy Monday everyone. Today, it was back to reality for me, after a much needed, relaxing vacation. Catching up?     Lately I have been obsessed with Strawberry Salads. I go through salad phases. Sometimes I despise them and sometimes I love them. Weird. Lately, I’m loving the strawberry, spinach, and feta with raspberry dressing. My packed lunch. One of my new favorite dressings is Newman’s Own Light Raspberry & Walnut. So tasty. So fresh!     Eggplant, Spinach and Goat Cheese Flatbread Pizza

    TGIF! All day I was thinking about what I was planning to make with this monster. I got this huge eggplant at the farmer’s market yesterday for $1.50. I have never cooked eggplant in my life! I’ve only eaten it out at restaurants or when other people have cooked it for me–never on my own. So I think it was time to give it a try.
