Recreating the Mixed Grill

Happy Monday everyone. Today, it was back to reality for me, after a much needed, relaxing vacation. Catching up? Here are my posts about my trip to Pittsburgh:

Last night I finally had some extra time to spend on making food! I have been craving steel-cut oats, in the worst way! (Check out the post I wrote about the different types of oats!) Thankfully, I had just enough left to make a whole batch! I also added in some oat bran. They came out fab. I’ve been missing the crunch of steel-cut oats!

I also mixed in about 1/2 of a mashed, over-ripened banana for creamy sweetness!

On top: maple peanut butter, my latest obsession…I think it may be the best peanut butter I’ve ever eaten!

Other toppings: pecans, and crumbled Manna Bread.

I decided to try the Banana Walnut Hemp flavor. It was delicious! The banana flavor wasn’t overpowering, either, it tasted just right. I’ve decided I really like Manna Bread. My favorite part, the short ingredients list:

BANANA WALNUT HEMP: Sprouted organic wheat kernels, filtered water, organic dried banana, organic walnuts, organic flax seeds, organic hemp seeds

I think the banana and the cinnamon date have been my favorite types so far. A while ago Manna Bread sent me a bunch of their breads to review, and I’ve tried the carrot raisin, rye, banana walnut, and cinnamon date. I think my least favorite was the rye. I also like that the bread freezes well, so I got to keep it in my freezer until I was ready to try it!

In case you missed my earlier post about it, Manna Bread is sprouted bread, which means it was made from sprouted whole grains and baked at a lower temperature than regular bread. The bread is also very cake like, so it wouldn’t make very good sandwich bread, in my opinion. It makes a nice small breakfast on its own, crumbled on oats, or even as a healthy dessert. I have never seen this bread in a typical grocery store, but I’m sure you could find it at a specialty healthy food store, like the Honest Weight Food Co-Op .

Anywho…my oats were fantastic this morning.

Now, onto more interesting things. I was craving eggs for dinner tonight. I was thinking about the mixed grill that Chris got at DeLuca’s Diner in Pittsburgh, and I attempted to recreate it., without the meat or home fries, of course.

You know your eggs are fresh from the farm when…

Actually, the eggs are from my neighbor’s chickens. 🙂

So, I sliced up some red pepper and a local tomato, along with some fresh spinach, and scrambled it all together with two eggs, and some feta cheese. This feta might be one of my favorites, I could eat it straight from the package.

The juice from the tomato turned my eggs red, but it was so tasty and fresh! I even threw on a side of fresh raspberries. They were so delicious. How’s that for a healthy recreation? I think I did a pretty good job!

Has anyone else tried to recreate a great meal from a restaurant? Did you succeed or fail?

    Wow that looks great! I love recreating dishes I have when I’m out, it really makes you realize that cooking at home is just as good (if not better) than paying double to go out. Even though sometimes I’d love to pay someone to clean up 🙂

    I am waiting to hear from my daughter. She works at Ditka’s in Pittsburgh and Ditka himself was coming in with 150-200 or his closest friends for some sort of meeting tonight. Maybe I can try to recreate what he was served.

    Yes, u can get manna bread at the coop. I’m pretty sure I’ve even seen it at Hannafords — I know I’ve seen it somewhere else than the coop. Prefer Ezekiel bread myself.
