Home Made Maple Peanut Butter

Lately I have been obsessed with Strawberry Salads. I go through salad phases. Sometimes I despise them and sometimes I love them. Weird. Lately, I’m loving the strawberry, spinach, and feta with raspberry dressing.

Since today was a “rest/cross training” day, I had some spare time when I got home from work. I wanted to get creative in the kitchen!

I’ve had maple peanut butter on my mind. And since I ran out of my favorite kind by Saratoga Peanut Butter, I decided to try to make my own! I searched around and used a combination of Ashley’s recipes for her various nut butters.

I started with peanuts.

And threw them in my cheap $30 mini food processor.

Added some sea salt, and some home made maple syrup (made by my neighbor from his maple trees!)

I also threw in some grapeseed oil, since it wasn’t getting very creamy and I was afraid my food processor was going to blow up. (It started smoking! ahhh!)

After processing for 15+ minutes, my peanut butter looked like this.

Strange?

It tasted REALLY good. Very sweet and maple-y. 😉

I guesstimated the amount of maple syrup and oil in it…not sure if its right though! I need to try it again to make sure.

After all that hard work, I was hungrryyy. Time for some more flatbread pizza! This time with some mexican flair. All I did was add Amy’s black bean and corn salsa to the top. 😉

Yum! It had a nice amount of spice and great flavor.

Anywho….my workout for today consisted of some Yoga Meldown, to get my blood pumping, and some foam rolling.
