Camping in the Wilderness
Okay, so, technically we weren’t in the wilderness, but we were in the Adirondacks!
But, before I talk about my camping trip, I need to tell you all about my long run! Saturday morning I had to run eight miles before we left for camping, because lord knows I wouldn’t want to do it Sunday when I got back. I got up at 7:00 Saturday morning, feeling tired. My legs were stiff from running 2 days previously with no rest day. But, I forged on.
Eight miles were on my plan, but I was feeling so tired during my run I thought I’d do seven and call it day. But then, after mile four when I took two Clif Shot Bloks and stretched a bit, I felt a burst of energy and thought, okay, eight it is. Seriously, the past two long runs I’ve used Clif Shot energy gel and Clif Shot Bloks they have worked. I feel so much more energized ten minutes after eating them. Not just saying that.
I finished eight miles in 1 hour, 23 minutes and 30 seconds. I’m pretty consistent with these eight milers!

Okay, after my run it was time to get ready for camping! My friend and co-worker, Katie, invited Chris and I to go camping with her, her husband, and their friends for one night in Lake George! Of course I said yes because I love camping and I haven’t gone in years. We had a site booked at Hearthstone campground.
It was all booked for the holiday weekend! But we had a nice little tent site with Katie and her husband Stefan. Thanks, Katie for taking these pictures of us putting up Chris’ little tent. ๐
I’ve never put up a tent like this before and it was super easy to throw together.
I actually didn’t take much pictures of the camping experience, since I kind of wanted to take a vacation from the digital world. ๐ But much fun was had. Thanks to Katie for inviting us to go camping with her! ๐
Sunday morning Chris and I went for a walk down to the lake. It was beautiful morning.

Anyway, after coming home from camping, I passed out and took a 2 hour much needed nap! And then I had the urge to bake! I broke out the canned pumpkin. Yes, its finally that time.
I went with a super super easy pumpkin chocolate chip cupcakes. Instead of adding the eggs and oil to the cake mix, you add a can of pumpkin. You now have a healthified version of chocolate cake. And its quite delicious. And, I figured that peanut butter frosting would be a great addition to these cupcakes. The recipe for the frosting is actually vegan, but I didn’t have any vegan margarine, so I just used Smart Balance Light instead.
The cupcakes came out great. The looked like huge muffins.
The peanut butter frosting was AMAZING. I’m bringing them to a labor day cookout later today, so I hope they go over well!

Yum! I’ve never replaced oil and eggs with pumpkin but I can see how it’d work. Great idea!
