Typical Sunday

So far my Sunday has been pretty typical. I love when my Sundays consist of relaxing + a longish run. 🙂

This morning started out with some breakfast that I got at the Fresh Market the other day.

The serving size for these waffles was weird-210 calories for 3 waffles. But then I opened the package and they were kind of small, so I only had two, drizzled with apple butter and a little bit of almond butter.

They were light and fluffy! Probably some of the best frozen waffles I’ve ever had! Frozen waffles are perfect pre-run fuel. 🙂

I headed out for a six mile run at around 11:15 and completed it in 55:23. I was actually pretty surprised I could keep an average 9:13 pace. It felt so good to be out there again, even if it was a bit cold! Running in cold weather is something I’m not used to yet–last year after the Troy Turkey Trot I ran on the treadmill all winter, something I don’t plan on doing this year. I want to run outside as much as possible through the winter, even if it means going to the local track.

After my run, I headed to the grocery store to pick up some things for Thanksgiving. I’m helping my mom out with Thanksgiving dinner this year by making some side dishes!

And I’m also going to make Tina’s Pumpkin Date Bars for dessert!

Anyway–hungry after my run I picked up this Clif Cherry Pomegranate Fruit & Nut Bar at the grocery store to munch on.

It was really tasty! A bit on the small side though. I am a big fan of Clif products, they usually never disappoint.

I decided to make eggs for my actual lunch. I scrambled up 1 egg, 2 egg whites, spinach and goat cheese, and put it in a light whole wheat wrap with some salsa. It was amazing.

I love eggs as a post-run meal!

    I love making sides and desserts for Thanksgiving! I never used to get involved in the making of the Thanksgiving feast. I’ve now come to realize it’s the best way to make sure there are healthy things to eat without offending anyone! And of course it’s just nice.

    Good luck with the cold weather runs outside! I love my Lululemon hat and gloves – couldn’t make it without them! The fresh air is so nice, so much better than being stuck in the gym all the time!
