    The Jimbo

Surprise! A Friday Post!! I didn’t think I’d have enough time/anything interesting to write about today but I do! Lets start with last night.    I spent the evening gallivanting around Lark Street after work. I was supposed to meet up with a bunch of friends for my friend’s 25th birthday celebration at 9pm, but I was super super hungry after work. At around 8 I met my sister for some pre-celebratory dinner at Bombers. We ordered downstairs since there is usually a wait upstairs.      (Photo from google images.) I took a photo exactly like this back in the day!  Lets discuss Bombers for a minute. I have a love/hate relationship…

    Portabella Burger Baby

Happy Friday! 🙂 It’s my favorite day of the week! I had one of my favorite meals for dinner tonight. A portabella burger. Yum! But more on that in a bit. Last night I had a tempo run scheduled, so I headed to the gym for that. I ran 5 miles in about 52 minutes. And I had kind of a hard time. For the first two miles my stomach felt like a rock! I have no idea why…I ate a lot of fruit during the day, including pineapple. Maybe that’s why? I love pineapple, but sometimes it doesn’t agree with me! I did a one mile warm up, and…

    Goals

Wow it’s pretty crappy outside. The weather is pretty reminiscent of the Missing Summer of 2009. I hope the month of May wasn’t too good to be true! Breakfast this morning was a yummy mixture of Special K Protein and Kashi H2H with some flaxmeal and soy milk. I also had a cup of green tea. I’m trying to figure out what types of breakfast foods will keep me fuller for longer, since lately I’ve been physically hungry on my drive into work and when I get there. I can’t figure out what the deal is! I’ve even tried drinking a glass of water and that doesn’t seem to help.…

    I'm a Baking Fiend!

Evening everyone! I just make the most delicious granola bars! I wore my new Ben & Jerry’s cow apron and I also had someone helping me in the kitchen. He doesn’t like granola bars though, only tuna. Anyway, I used a recipe for “Skinny” Oatmeal Raisin Bars I found at Carrots ‘N Cake. Except I made a few substitutions. Instead of all purpose flour I used whole wheat flour and instead of 1 cup of raisins, I used 1/2 cup of crushed walnuts and 1/2 cup of dark chocolate chips. I can’t bake anything without chocolate chips, apparently. They came out a bit crumbly, but tasted great! Not too sweet.…

    Drowning in Pasta Salad

I think I made enough Pasta Salad tonight to feed an army, but I’ll get back to that later. This morning I had a yummy breakfast, some Special K protein with Kashi H2H! I’ve never tried Kashi cereal before but I picked it up yesterday the store because I’m trying to steer away from heavily processed foods. I’m pretty sure Special K has a long list of ingredients but I love it because it is low calorie and high in protein and fiber, and that’s why I eat it. But anyway, I really liked the Kashi cereal! I think its going to be one of my staple cereals now. It…
