Pumpkin Spice Cupcakes with Cream Cheese Frosting

Going with the theme I have this week, I have a recipe for you!! I can’t believe I have so many! Well, this one I didn’t really make up myself, its just kind of general knowledge that when you mix a can of pure pumpkin with a box of spice cake mix you have healthified pumpkin cupcakes. The cream cheese frosting isn’t healthy, though. ๐Ÿ™

Originally I was going to color the frosting, but I decided not to, since I have Halloween theme sprinkles.

Pumpkin Spice Cupcakes with Cream Cheese Frosting

Ingredients

  • 1 box of spice cake mix
  • 1 can of pure pumpkin
  • non stick baking spray
  • 1 can of cream cheese frosting
  • Halloween sprinkles
  • Candy corn

Directions

1. Preheat oven to 350 degrees

2. Combine pumpkin and cake mix in mixing bowl until thoroughly blended (you don’t need to add anything else!)

3. Spray muffin tin with non stick spray

4. Place batter (it will be thick and sticky) into muffin pan in large spoonfuls

5. Bake for 18-20 minutes, or until toothpick inserted into cupcake comes out clean

6. Let cool for 10-15 minutes on wire wrack

7. Frost with cream cheese frosting

8. Decorate however you wish!

9. Enjoy your festive, delicious cupcakes!
