Pre-Race Eats
Good afternoon everyone!! Only a couple hours away until the Workforce Challenge! Yay! And it is already really warm out, so I’ve been drinking water like a fiend!
Last night I made a breakfast cookie to have this morning. I kind of went overboard with the oats and added about 3/4 a cup. I usually only add about 1/2 a cup, but I saw some leftover oats in the bottom of the container and I wanted to use them all up. I think this is one of my favorite breakfasts…right underneath chocolate chip banana pancakes of course. But I figured this would be the perfect breakfast!
In my breakfast cookie
- 3/4 cup of old-fashioned oats
- 1 tbsp of almond butter
- 2 tbsps of light soy milk
- 1/2 mashed banana
- 1 small handful of dark chocolate chips
It was almost too much for me to eat, but I ate it all anyway. 🙂 Along with my breakfast cookie I made a small chocolate protien shake. I always use light soy milk in my shakes, as I don’t drink cow’s milk (I don’t care for the taste).
I also stuck to a pretty simple lunch today. Maybe more like a second breakfast. 🙂 I had some Special K protien cereal mixed with Special K red berries with a sprinkle of granola and fresh blueberries. And light soymilk of course.
I also had an apple. For snack later I have a banana with dark chocolate dreams peanut butter and a luna bar.
I went on a short walk today on my break and then went to check out the farmer’s market down the street. It was pretty much just a flower and plant market, with a couple tables of baked goods. No produce yet. Its really great if you are looking for plants. Hopefully this weekend I will check out the Troy Market!
