    A Look Back at 2010

    Another year down. I cannot believe today is the last day of 2010 and also the last day of the decade. Wow. Starting this blog was one of the best things I’ve done this year. It has given me a creative outlet, allowing me to write about and document events in my life that I wouldn’t normally write about if I didn’t have a place to do it.     Catching up at Red’s

    Tuesday evening my sister and I had a special date with one of our close friends from college, Ashley. Ashley just recently got engaged to her boyfriend Joe. It had been a while since we’ve seen them so we wanted to get together for dinner! Look at her gorgeous ring!     Eggplant Parm for Two

    I finally got around to making something with the breaded eggplant cutlets that I got at the Fresh Market last month. And to my surprise there was a recipe for quick & easy eggplant parm on the back of the box! I had to make it. Quick & Easy Eggplant Parm — Modified for two Ingredients 1/2 box of eggplant cutlets (about 4-5 cutlets) tomato sauce (I use light tomato basil) shredded cheese (I use part skim mozzarella) Instructions 1.     What to do on a Snow Day

    What is a girl to do when she is snowed in? Brew some Snow in the Tropics tea, of course! Then, look outside. Definitely not the tropics. 🙁 Decide to go snowshowing. But first, find snowshoes for $3 at a garage sale!    Snowshoeing in the woods is so peaceful! I might go back out there later… After snowshoeing, make a cheddar and superfruit jam sandwich. Enjoy while watching Sunrise Earth on TV. And pretend I’m at the beach. Did you get tons of snow today? If so–what do you do during your “Snow Day”?

    Christmas Update

    I hope everyone had a fantastic holiday. I know my family and I did! And so did a certain cat! Where’s Cedric’s present? In his stocking of course. Cedric got some treats and a toy lizard for Christmas. Too bad he wanted nothing to do with the catnip lizard. He would rather be playing in luggage set boxes. We had fresh french vanilla coffee and White Christmas Tea while opening presents with my parents! I opted for the tea! (in my new Starbucks mug –thanks Brendan!)
