Catching up at Red’s

Tuesday evening my sister and I had a special date with one of our close friends from college, Ashley. Ashley just recently got engaged to her boyfriend Joe.

It had been a while since we’ve seen them so we wanted to get together for dinner!

We decided to have dinner at Red’s Seafood & Wine Bar in Coxsackie–a small town about half way between where each of us lives.

It was so hard to decide on what to order, since all of the seafood looked fantastic. My sister and I ended up splitting the clam steamers as an appetizer. But for my main entree I went with the baked stuffed shrimp: five shrimp stuffed with shellfish stuffing.

The shrimp came with green beans, carrots and a choice of another side. I chose the rice pilaf. The rice had a really good flavor, but was a little bit chewy.

The shrimp on the other hand were delicious! You can’t see them but they were underneath the balls of seafood stuffing. The stuffing was pretty flavorful, but I had a hard time tasting “seafood” in it. It was a pretty good meal for a restaurant in the middle of nowhere. 😉

My sister and I had a lovely time catching up with Ashley and Joe. We don’t get to see them that often so it was nice.

Tuesday night was also the start of my half marathon training! I was originally going to get up early and run on the treadmill before work, but when I woke up at 6:00 AM I realized that my iPod was still at work, and there was no way I was going to run without my headphones at 6:00 in the morning and wake my parents up with the TV. I nixed that idea fast and went back to bed!

Thankfully I had the motivation after dinner to hop on the treadmill at about 9:45 PM and ran 2.0 miles in 19 minutes. Its funny, no matter how late I work out, and even if it takes me forever to finally get moving, I never regret a workout! 🙂
