Honey Lemon Tea and Chickpea Salad

Last night as I was getting ready for bed I felt a sore throat coming on. Not a good sign! So I’ve been popping Cold-Eze and this morning I had some tea. I brewed a bag of Lemon Zinger and a bag of regular Lipton tea together with some honey, and so far it has helped!

Last night I felt like making something different for dinner, so I stopped at Hannaford after work to get the ingredients for Smitten Kitchen’s Smashed Chickpea Salad. Since I already have the chickpeas at home, I wanted to make this.  It was pretty easy to make, and I even put on the roasted red peppers and made the tahini spread. The spread was pretty garlic-y but delicious! It really added to the sandwich. Sadly, my camera’s battery died, so I didn’t get any pictures of my dinner.  But I have leftovers for lunch today! So tasty!

I put it on a toasted honey wheat sandwich thin and had some fresh pineapple and blueberries on the side. (I ate them before I took this picture!) A very satisfying lunch!

I went to the gym after work today, and planned on running five miles. It was actually pretty hard. I warmed up faster than I usually do, at a 10 minute mile for the first mile, and picked up for the next three miles. It was pretty intense and I was sweating a lot! I felt pretty good after. I also did some ab work before I ran, because I realized that if I wait til after my run, chances are I will NOT want to do crunches!

I told myself my reward for running five miles tonight would be banana chocolate chip pancakes for dinner, so I made them.  Just as good as last time! I also have two left over that might have to eat for breakfast tomorrow…

I feel pretty exhausted right now, and my sore throat is coming back. I really hope it doesn’t last and I’m not getting sick! That would not be any fun.

Okay, I’m off to watch a couple episodes of “Dexter” and then pass out. Night!
