Farmer’s Flatbread Pizza

This is going to be short and sweet because I’m headed out the door to go the gym. It’s late, I know. But I’ve only got to run a few miles today, so it shouldn’t be too bad. I used to run at night all the time, after dinner…but when I started running long distances I realized I couldn’t do that after dinner anymore.

Speaking of dinner, I made some more flatbread pizza. I can’t believe how good this turned out.

I used a 100 calorie pita flat bread type thing… it made really good flatbread crust!

Toppings included: local grown eggplant, local tomato, goat cheese, mozzarella, and spinach. And it was INCREDIBLE. I can really make a flatbread pizza, if I do say so myself!

    Hi Jen,
    I made pizza for dinner too – on impulse I picked up dough at Hannaford on my way home. It accidentally got overbaked but was pretty good anyhow. It was half white pizza for my husband and half red for me. I should try flatbread sometime! Your toppings look tastier too!

    Wow fall is definitely in the air! That tree looks beautiful but not better than that pizza! Yum!

    I used to work out everyday at night, when I got into a serious relationship it all stopped. Now I realize that I just can’t go that late at night because it keeps me up and honestly, I like spending time with my other half. I’m trying to figure out what’s best for me and as of now I think right after work is working. No later than that though lol.
