Delicious Dolmathes

Tonight I hit up the gym to start working on my speedwork for my 15K training plan. It was 98 degrees when I left work, so running outside was a no-go. I would have died. But it wasn’t much cooler in my gym, that’s for sure. I ran a total 4.0 miles in 40 minutes, but did 3 repeats of 800 meters at a 9:12/mile pace. It definitely had me working up a sweat. I probably could have ran a bit faster, but I didn’t want to push it too hard at my first attempt at speedwork in a while! I also threw in a few walking breaks during my 400 m recovery jogs. I will say a treadmill is good for a few things: speedwork and hot days!

I was starving after I left the gym so I headed over to the Troy Food Co-Op to get some food since my fridge has been pretty bare lately. I saw these in the deli and couldn’t pass them up.

Vegetarian Stuffed Dolmathes (grape leaves)! Yumm. I had a delicious stuffed grape leaves wrap at the Greek Truck last week, which is one of the vendors parked by the Capital lawn at lunchtime. That wrap is one of my favorite meals, so I tried my best to re-create it!

Of course I can’t stuff my own grape leaves (too lazy for that) so I got the pre-made ones at the co-op, which came with a spicy white paste of some sort. I toasted a sandwich thin, spread on some home made hummus, the spicy paste and the grape leaves and I had myself a delicious dinner.

I also had some pita chips on the side.

These were amazing! They were on sale and it was also student discount night at the co-op. Score! I was happy with my dinner.

Dessert was a smoothie.

Currently I’m waiting for some pizza dough to rise! Chris and I are making pizza tomorrow night, so I broke out my new (to me!) electric mixer. Its vintage! My mom found this sucker at a garage sale for about $4 and it still works.

    That’s awesome find your Mom got! I never have luck when I go to garage sales. How do you like the Food Coop? I’ve been meaning to check it out!

      I like it! The grocery items (like cereals, yogurt,almond milk, frozen items, etc.) are a bit over-priced so I go to PC for those things. I go to the co-op when I need some produce or food from the bulk bins in a pinch since those are cheaper.

    I have that exact same mixer in my kitchen — my grandparents got it the same year my parents got married — 1977! My parents had one too (in 70s green); it was the only thing my sister and I used to argue about who would get it. Now, however, I do use my KitchenAid more, mostly because it doesn’t threaten to catch on fire whenever I do something crazy like making meringue. But since I bake a lot, it’s nice to have an extra mixer, and it still works great.
