Dear Boulder
Dear Boulder Colorado,
I wish I could turn back time so I could choose the University of Colorado at Boulder to attend for college. I would have gotten to see this when I drove into the city.
I would have gotten to attend classes as an undergrad with the Rocky Mountains as a backdrop.
I could have rode my bike to class with the tons of other students who did the same.
I would have marveled at your campus and thought how amazing and gorgeous it was!
In my spare time, I could have enjoyed delicious food at the incredible amount of interesting and diverse restaurants and bars with awesome menus that you have in your city!
And I would have experienced the deliciousness that is vegetarian food much earlier, like this amazing tempeh reuben that I had.
I would have been introduced to delicious craft beer like this blackberry wheat at your famous Southern Sun Brewery.
Who knows…maybe someday I will find myself living here with you, because I’ve been here for less than 24 hours and I’m already loving it.

Boulder is amazing! I got to visit a few summers ago — so many delicious places to eat! I ate at this crepe place called foolish craigs that was pretty delish – enjoy your trip!

I got to visit Boulder a couple months ago and visited the Southern Sun Brewery. The Boulder Creek Path is amazing! If you get a chance, check out Leaf Restaurant (vegetarian) and the Celestial Seasoning factory tour. Enjoy!

Great photos! But I must say, I lived in Golden, CO for 2 years while I went to graduate school (visited Boulder a few times), and while it’s beautiful out there, I was ready to come back to NY after those 2 years. I missed the abundance of water, hidden swimming holes, dense forests… the scenery is so different compared to upstate NY. It is breathtaking, but it wasn’t for me long term.
