Date Night Enchiladas

“Date Night” with Chris lately has consisted of making dinner together combined with watching a movie.

Thursday night was date night this week and I had one thing on the brain–enchiladas! Nothing beats my favorite–the Enchiladas el Mariachi from El Mariachi in Albany, but these home-made black bean & sweet potato ones were pretty good.

I used this recipe as a guide. First, I roughly chopped the sweet potatoes and baked them in the oven for 30 minutes at 350, mashed them a little bit and combined them with black beans and a can of southwestern style corn and lime juice and some spices. We stuffed the corn tortillas and covered them in a simple green enchilada sauce, topped with low fat cheese and baked for 30 minutes.

I realized we forgot a step. I forgot to put some sauce inside the corn tortillas so they came out a little bit dry after baking, but the ones in the middle were perfect!

The movie we watched was a documentary called Encounters at the End of the World.

It was about Antarctica’s frozen landscapes and the people who work there in the name of science. It was pretty fascinating and some of the shots of the divers diving under the ice was incredible!

The movie made me realize I’m definitely not looking forward to winter…
