    Cranberry Walnut Quinoa

Holy crap, I’ve actually got a recipe for you today! I think I’ve talked about this on my blog in the past, but I can’t remember if I’ve ever typed up the recipe. Cranberry Walnut Quinoa, adapted from the food network recipe Ingredients 2 cups of all-natural vegetable broth 1 cup of organic quinoa (I use bob’s red mill) 2 tbsp of olive oil sprinkle of salad seasoning sprinkle of garlic powder sprinkle of rosemary 1/4…

I’ve only eaten it out at restaurants or when other people have cooked it for me–never on my own. So I think it was time to give it a try. I wanted to make pizza tonight, so I went with Eggplant, Spinach, and Goat Cheese Flatbread pizza. ๐Ÿ™‚ I cut up the eggplant into little triangles, and put them on the flatbread, along with cheese and some baby spinach. Ingredients Eggplant, thinly sliced into…

Grilled Zucchini and Green Pepper Sandwich

Good evening everyone. I just made the most delicious and satisfying dinner! I can’t wait to tell you guys about it, but I’m going to tell you about my breakfast first. This morning I tried something new with my old smoothie routine. I added OATS to my smoothie! Some of you may be asking WHY ON EARTH WOULD YOU DO THAT? Well, the answer is because it makes the smoothie thicker, and keeps you full for longer! This is the truth! I have a problem with my breakfasts holding me over until lunch (they usually don’t, no matter what I eat), and this trick actually worked! I was full until…

    Portabella Burger Baby

Happy Friday! ๐Ÿ™‚ It’s my favorite day of the week! I had one of my favorite meals for dinner tonight. A portabella burger. Yum! But more on that in a bit. Last night I had a tempo run scheduled, so I headed to the gym for that. I ran 5 miles in about 52 minutes. And I had kind of a hard time. For the first two miles my stomach felt like a rock! I have no idea why…I ate a lot of fruit during the day, including pineapple. Maybe that’s why? I love pineapple, but sometimes it doesn’t agree with me! I did a one mile warm up, and…
