Grilled Zucchini and Green Pepper Sandwich

Good evening everyone. I just made the most delicious and satisfying dinner! I can’t wait to tell you guys about it, but I’m going to tell you about my breakfast first.

This morning I tried something new with my old smoothie routine. I added OATS to my smoothie! Some of you may be asking WHY ON EARTH WOULD YOU DO THAT? Well, the answer is because it makes the smoothie thicker, and keeps you full for longer! This is the truth! I have a problem with my breakfasts holding me over until lunch (they usually don’t, no matter what I eat), and this trick actually worked! I was full until lunch time, people. That never happens! Thank you oats, for helping me out. And you honestly can’t really taste them, but you can tell because they make the smoothie is really thick and wonderful.

I took the classic Chocolate Cherry Bomb route.

  • 1/2 cup of almond milk
  • 1/2 scoop of brown rice protein powder
  • 1 tsp of chia seeds
  • 1/2 tsp of maca powder
  • handful of frozen organic cherries
  • 1-2 tbsp of raw OATS!

Along with my smoothie, of course, I had to have a scone. Yum. I’m in love!

Okay, lunch wasn’t too interesting, but I will tell you I tried another Gnu Bar! I mentioned earlier than Gnu sent me some of their fiber bars to try out and today I was in the mood to try the Lemon Ginger flavor.

So far, I think this one just might be my favorite out of the ones I’ve tried so far. It was so unique! The flavor is not something you would expect in a fiber bar! And its delicious! So far my favorites have been this one, and the Chocolate Brownie. Tasty and healthy too.

Anyway, after I got home from work, I hopped on the treadmill for a short 2 mile run. Right after my run I popped in Jillian Micheals No More Trouble Zones DVD and did some weight training circuits. I did chest and shoulders, along with the core circuit. It was pretty hard! I’m eventually going to do the whole thing at once, but I figured since I already ran two miles, doing a couple circuits would be good enough. Lets hope I can stick to the DVD…

After my workout, it was time for dinner, and I was starving, so I wanted to make something summery and tasty, but still really healthy. I had some zucchini laying around that my coworker grew in his garden that I’ve been dying to grill, so I decided to make a Grilled Zucchini and Green Pepper Sandwich.

Here is what you need to make the sandwich:

  • 4 slices of a medium zucchini, sliced into rounds
  • about 1/2 of a green pepper, sliced
  • 1 tbsp of olive oil
  • salt and pepper to taste
  • 1 slice of cheese (I use provolone)
  • 1 arnold sandwich thin

Directions

  1. Toast sandwich arnold thin if desired
  2. Grill zucchini slices in small pan with olive oil, about 4-5 minutes on each side until nice and brown, along with pepper slices
  3. Grill until peppers are cooked, they might take longer than the zucchini
  4. When zucchini and peppers are done, place them on sandwich thin, along with cheese
  5. ENJOY!

Its pretty quick and easy…and I’m terrible at coming up with recipes…

Dessert was some of my mom’s refreshing five cup salad! You can’t go wrong with sour cream, mandarin oranges, pineapple, coconut, and marshmallow. Such a summery salad!

    Now I really want a cherry chocolate bomb smoothie! I love the addition of oats. I seriously need to try this stat!

    Your sandwich looks awesome too. One of my favorite summertime dishes is watermelon salad- diced watermelon, fresh basil, feta cheese,a little balsamic and some red onion if you’re feeling it. It sounds weird but it’s great!
