Sunday Adventures in Woodstock – Take 2
Ok, so, since I lost every post I’ve made, I feel like I should at least try to make up some. I feel like my last post about my trip to Woodstock was great and I want to try to write it up again for those who might have missed out. So here’s the shortened version, with pictures! Sunday my sister, and my friend Brendan and I decided to go hiking in Woodstock, NY for the day! Before our hike we stopped at a natural foods store in the village called Sunflower Natural Foods. It was so cute! It reminded me of the HWFC in Albany, but more hippyish! I…

Honey Lemon Tea and Chickpea Salad
Last night as I was getting ready for bed I felt a sore throat coming on. Not a good sign! So I’ve been popping Cold-Eze and this morning I had some tea. I brewed a bag of Lemon Zinger and a bag of regular Lipton tea together with some honey, and so far it has helped! Last night I felt like making something different for dinner, so I stopped at Hannaford after work to get the ingredients for Smitten Kitchen’s Smashed Chickpea Salad. Since I already have the chickpeas at home, I wanted to make this. It was pretty easy to make, and I even put on the roasted red…

Six Miles on a Track
Today I didn’t have a running partner and I wanted to get a six mile run in, so after I work I headed to my old high school track. I ran a pretty easy six miles. I felt pretty good after, I probably could have kept going, but I was hungry and getting bored of running around in circles. One thing I like about running on tracks is that it is easier on my knees. After running six miles with Sue around her neighborhood, my legs were definitely more sore. Either that or I’m getting used to running the distance. But I figured I would now write about using my…

Banana Pancakes and Tulips
Yesterday morning I woke up craving pancakes. I had this recipe for a while, but decided today would be the day to try it. I think I might have made them once before, but I’m not really sure…anyway, I had all the ingredients so I went to work. I tweaked the recipe a bit. I had some wheat bran lying around, so I added about 1/4 a cup to the mix of dry ingredients. I also added about a tablespoon of ground flax seeds. I had those in my fridge I wanted to use up. So the pancake batter looked like this. I’m pretty sure these were the best pancakes…

Farm Fresh Eggs
This week I wanted to try something new. After reading a bunch of books about food and where it comes from, I’m having a hard time eating food that comes from factory farms. I don’t really want to get into much detail about it, but I love animals, and I don’t like how they get treated cruelly for our benefit, and its hard for me to even want to eat meat anymore. I gave up beef and pork almost two years ago, and now I’m in the process of giving up chicken and turkey. Even the idea of eating eggs from factory farmed hens bothers me. So, knowing that there…
