Breakfast, Lunch and Dinner

Today I actually have a recipe for you all and its really tasty. Here is a sneak peek.

A green monster! In the smoothie:

  • lots of spinach
  • 1/2 cup of almond milk
  • 1/2 tsp of maca powder
  • 1 banana
  • 5 cubes of ice

Doesn’t it look extremely green? It was tasty.

A surprise from Pop Chips! I’m a huge fan of these tasty chips. They’re all natural and only 100 calories a bag. Read my initial review here.

This morning for my morning snack I tried something new. I’m trying to cut back on so much dairy–I usually eat 1 yogurt a day, so in order to limit my dairy intake, I tried So Delicious cultured coconut milk! AKA non dairy non soy yogurt.

Its a bit pricey. More expensive then my beloved Chobani. But, it was really good. It was creamy and not too thin. I’m used to thick greek yogurt. It was good though, I would buy it again. I’m not go ing to cut out greek yogurt completely (I love Chobani too much!) because I need the protein, but a few times a week I might have this instead.

Lunch was a PBJ. I finally got to use my TJ’s superfruit spread and it was really good on the PBJ.

So, after work I headed to the gym. I wanted to try the treadmill again. Thankfully my leg wasn’t hurting (but it was a bit stiff) so I ran three miles! The funny part is..I could have kept going, but I didn’t want to push it. I really wish I wasn’t having such problems with my leg, since I’ve been feeling really strong lately.

And now, what you’ve been waiting for: DINNER!

Tonight I was in the mood for black beans and rice. So, I mixed some Jalapeno and Lime Black Beans

with some brown wild rice

and heated them up in the microwave to make this! This is about 3-4 servings.

I also added some shrimp and onions to my serving, which was incredible!

Jalapeno Black Beans and Rice with Shrimp

Ingredients

  • 6 pre-cooked baby shrimp
  • 1 TBSP diced red onion
  • 1/2 tsp minced garlic
  • 1 can of jalapeno black beans with lime juice
  • 1 bag of brown rice (I use the instant kind)

Instructions

  1. Cook rice in microwave according to directions on package
  2. While rice is heating up, drain extra liquid from black beans
  3. Heat black beans in microwave safe bowl for aprox 1:00 min
  4. Mix black beans and rice well (makes about 3-4 servings)
  5. Add shrimp, garlic and onion to skillet
  6. Cook shrimp until lightly browned
  7. Add shrimp to 1 serving of rice & beans
  8. Enjoy!

Dessert was some Christmas cookies. What do you expect? 😉
