Bag of Veggies

Yesterday I wasn’t feeling too hot, so I’m finally getting around to posting something interesting! My stomach has not been feeling right lately, and I’m not really sure why. Anywho…

Yesterday I wanted to make something quick for breakfast, since I’m usually running out of time. I decided on waffles! I love waffles. Especially blueberry waffles. These are Van’s blueberry waffles, to be exact. I topped them with home made blueberry sauce + almond butter + pecans. Yum.

I kept things light with lunch yesterday because I wasn’t sure what was up with my stomach. But by the time I got home I was starving. I was in the mood for one of my all-time comfort foods, an egg sandwich! I made the the sandwich using a whole wheat sandwich roll, which was only about 150 calories. I scrambled up two farm fresh eggs, and topped it with shredded reduced fat cheddar cheese. I also dabbed on some peach mango salsa! I love adding salsa to my eggs now, it’s so tasty. The egg sandwich was delish, I gobbled it up in about two minutes. 🙂

I didn’t run yesterday, and I felt like I needed some sort of exercise, so later yesterday evening I popped in Jillian Micheals’ Yoga Meltdown! I always feel so good after doing this workout. There is something so cleansing about yoga. And I’m always dripping sweat afterword! Jillian always kicks my butt.

So, this morning Caitlin was on the Today Show! I’m super excited and so happy for her!!! I ordered my Operation Beautiful book the other day, but it hasn’t come in yet (I had it shipped to the store) and I’m so excited to read it. I can’t wait. As soon as I get home I’m going to watch her segment, since I had my DVR set to record it. 🙂 How awesome!

Anyway…on to today!

I got to work this morning and there were an abundance of vegetables on the table. I quickly grabbed a bag full. 🙂

One of my co-workers has a vegetable garden and brings in fresh produce all the time. I scored some yellow squash, zucchini, broccoli, and a purple pepper. I’ve never seen a purple pepper before! I love it!

Isn’t that the biggest head of broccoli you’ve ever seen? I can’t wait to make dinner tonight.
