Hi there. Hurray for Friday. 🙂 AND its supposed to be almost 90 degrees today. How is that for weird? I miss my fall weather! I want to wear boots and scarves! Anywho, lets rewind a bit…

Yesterday for breakfast I had some Van’s multigrain waffles, topped with home made apple butter, maple peanut butter and a touch of home made maple syrup. They were great. I really love Van’s. (I’m not just saying that, I really think so.) Frozen waffles are my favorite because they are so quick and easy. They were only 180 calories for two waffles. I think those are really great stats.

The apple butter was a great addition, it tasted like apple sauce but with all the spices of fall. Yummm.

Last night I had class for the second week in a row, and it’s been going well! My class starts at 6:00 so I needed a place to hang out until it started, so I got dinner at a local coffee shop. I ordered the Farmer’s Market salad: arugula, heirloom tomato, fresh mozzarella and sunflower seeds with French vinaigrette.

The salad was nice, since I love arugula, but there was probably a bit TOO much of it. I would have liked it better if it was mixed with spinach, or some other green. I took the cucumbers off since I hate them, but the orange thing on top is the heirloom tomato. It had such delicious flavor. I could tell the difference between the heirloom and the regular tomato. Heirloom has so much more flavor. The mozzarella was a nice touch too, but I was wishing for more pieces of it. It was good, but didn’t hold me over through my class. I was starving by the time I got out….

While I was drinking my iced tea, I looked over my textbook.

Psychology is really interesting! I never took it in college, since I was assigned Sociology instead my freshman year, but it has been something I always wanted to take, and it works out since its a pre-requisite for the nutrition program I want to get into. Fascinating stuff! Last night the professor showed us part of a video about separating sides of the brain and how each side functions on its own accord along with each side of the body. Who knew??
