Whole Wheat Oatmeal Pancakes

Yesterday following my 12 mile run, I decided to whip up some whole wheat oatmeal pancakes that were pretty darn good. I had a printed out recipe for oatmeal blueberry pancakes, but I couldn’t for the life of me remember where I got it from. But after googling, I discovered it was this recipe.

Anyway, I modified the blueberry pancake recipe as follows.

Whole Wheat Oatmeal Pancakes

Ingredients

  • 3/4 cup old fashioned oatmeal
  • 1 cup water
  • 1/2 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 egg, slightly beaten
  • 3/4 cup almond milk
  • 2 tablespoons of apple butter
  • 1 sliced apple

Directions

1. Cook oatmeal with 1 cup of water (or almond milk) according to directions. I cook it for 1 minute and 30 seconds in the microwave.

2. Whisk together all dry ingredients in large bowl

3. Combine egg and almond milk in another bowl

4. Stir wet ingredients into dry, mixing well

5. Mix cooked oatmeal into pancake batter

6. Pour batter onto heated pan, cooking at least 3 minutes on each side, until pancakes are lightly brown

7. Top with apple butter and sliced apples

8. Devour pancakes!

Recipe makes 8 medium sized pancakes

I had originally wanted to add small slices of apple into the batter, but I was just too lazy to peel the darn thing.

These pancakes make a great healthy fall breakfast (or post-12 mile lunch!) I love my pancakes.
