Pumpkin Sweet Potato Soup
I love pumpkin soup. I can say my first attempt at making it was a success!! It is amazing!! This version tastes really creamy even though there is no cream to be found. And the sweet potato makes it hearty. Its adapted from this about.com recipe.
Pumpkin Sweet Potato Soup (vegan)
Ingredients
- 1 onion, diced
- 1 tablespoon margarine
- 1 cup apple cider
- 7 cups organic vegetable broth
- 1 large sweet potato
- 1 29 oz can of pumpkin (not pumpkin pie filling)
- 1 apple, cored and peeled
Instructions
1. Heat onion and margarine in large soup pot for about 2 minutes
2. Add apple cider, bring to a simmer for 5 minutes
3. Add rest of the ingredients and cook covered for 30-40 minutes until potato is soft
5. Puree with immersion blender until blended well
6. Enjoy!

This sounds so so good! My mom and I have been talking about making pumpkin soup for like the past 3 or 4 years?! but we never end up doing it! This recipe seems nice and simple though. I should try it!
