Pumpkin Pie Steel-Cut Oats
Last night I was on a roll in the kitchen and whipped up a big batch of Steel-Cut Oats, Irish Style, for the week! (Wondering what steel-cut oats are? Check out my previous post all about oats.) They are really super easy to make and much more creamier than rolled oats.
Since I wasn’t a huge fan of pure pumpkin in my oats (gasp!), I tried pumpkin butter, and it was amazing!!
Pumpkin Pie Steel-Cut Oats
Ingredients
- 1/4 cup of steel-cut oats, already prepared according to package
- 1 TBSP of pumpkin butter
- 1/2 banana, mashed (optional, you could add in a nut butter instead)
- 1 TBSP of chopped pecans
- Sprinkle of pumpkin pie spice
Directions
- Prepare oats according to package. I like to make them on an evening where I have free time since it takes about 25 minutes to cook them on the stove
- Heat up 1/4 cup of prepared oats in microwave for 1 minute and 30 seconds
- Mix in mashed banana until well blended
- Top with pumpkin butter, pumpkin pie spice, and pecans
- Enjoy your tasty bowl of steel-cut oats that taste like pumpkin pie, but without the guilt!

The pecans are a nice touch.

I like to make the steel cut oats in a crockpot. I set it all up the night before, set it to low, and let it go! When we wake up in the morning, not only does the apartment smell great, but there is no waiting for it to cook!
