Pumpkin Pie Steel-Cut Oats

Last night I was on a roll in the kitchen and whipped up a big batch of Steel-Cut Oats, Irish Style, for the week! (Wondering what steel-cut oats are? Check out my previous post all about oats.) They are really super easy to make and much more creamier than rolled oats.

Since I wasn’t a huge fan of pure pumpkin in my oats (gasp!), I tried pumpkin butter, and it was amazing!!

Pumpkin Pie Steel-Cut Oats

Ingredients

  • 1/4 cup of steel-cut oats, already prepared according to package
  • 1 TBSP of pumpkin butter
  • 1/2 banana, mashed (optional, you could add in a nut butter instead)
  • 1 TBSP of chopped pecans
  • Sprinkle of pumpkin pie spice

Directions

  1. Prepare oats according to package. I like to make them on an evening where I have free time since it takes about 25 minutes to cook them on the stove
  2. Heat up 1/4 cup of prepared oats in microwave for 1 minute and 30 seconds
  3. Mix in mashed banana until well blended
  4. Top with pumpkin butter, pumpkin pie spice, and pecans
  5. Enjoy your tasty bowl of steel-cut oats that taste like pumpkin pie, but without the guilt!
