One Busy Weekend

Hola everyone! Phew. Finally some time to blog! I’ve been neglecting the blog world this weekend, sorry about that! Time to get down to business. Let’s start with Saturday morning.

I had two barbecues to go to on Saturday, so for breakfast I had a simple yogurt bowl! I threw in some honey vanilla Chobani, a 1/2 cup of oats, 1/2 of banana, and some fresh strawberries into the mix. It looked like this.

All mixed together. The oats tasted a bit bland. But the fruit helped!

After breakfast I went for an early bike ride. I wanted to get some exercise in because I knew I’d be eating a lot at the parties I had to go to. The ride was a nice workout. I rode 8 miles in 54:14.

After my ride, I made some special guacamole for my sister’s party. This is by far, my favorite guac recipe. It’s so healthy! I love that it calls for a can of white beans. You can’t even tell the beans are in there!

This guac is SO good! I make it all the time.

Anyway, after making the guac, I had to head to my friend/coworker’s wedding celebration/bbq! It was such a good time! Unfortuatnely, I was a bad blogger and didn’t get my camera out once!! I can just tell you what I ate.  I munched on some grapes, strawberries and watermelon along with a few cheese and crackers before dinner was served. For dinner I had veggie lasagna with side salad and a hardroll! It was so good and I was so happy there was a veggie option there! Chris came with me to the bbq and he got a pulled pork sandwich and said it was delicious. I believe him!

After dinner it was time to watch the World Cup!!! Katie let us and a few other people watch it in her husband’s man cave. It was a really cool room with a big screen TV and nice sofas! Unfortunately, the game didn’t end well for the US team. 🙁 Sad faces all around. But it was still a fun party! At one point it was time for the new bride and groom to cut the cake! I didn’t have the wedding cake, but I did have a small slice of cheesecake, which was delicious!

After that party, Chris and I headed to my sister’s bbq. I also did not take any pictures of this one…sorry. I just wasn’t thinking about blogging for some reason! I wasn’t too hungry for the food here but I did have some of my guac! Along with some of the five cup salad my mom made.

In case you don’t know, a five cup salad is:

  • 1 cup sour cream (my mom used light sour cream)
  • 1 cup coconut
  • 1 cup pineapple chunks, drained
  • 1 cup mandarin oranges, drained
  • 1 cup miniature marshmallows

It was SO good and so perfect for a summer bbq, since it tastes really tropical! It was definitely my favorite food of the evening! (I might have even polished off the leftovers today…) Yum.

I also ate part of a salmon burger (no bun), and a couple of cookies. I wasn’t to0 hungry.

On to today…

This morning I got up and knew I had to run eight miles. Let’s just say I was not looking forward to this last night. But, when I woke up I felt really great. I had a piece of toast with peanut butter and honey, and a cup of green tea and I felt more than ready to run. To made my long run more manageable I headed to the gym.

I ran the first three miles on the treadmill to warm up at about an 11:30 pace. I finished the three in 33:40. Not too bad. I felt excellent. I then hopped off the treadmill and got my gear together (spibelt with phone, Garmin, ipod, sunglasses), downed some water and a Clif Shot Blok, waited for my Garmin to load (it took way too long by the way) and was on my way to run the remaining five miles outside.

I actually ended up running 4.77. But let’s say that’s five.

Total Time: About 1 hour and 22 minutes. Jeeze.

I was getting pretty tired by the end, so I cut off the last quarter of a mile. My feet were hurting, but other than that, I felt great! 🙂

I made a pit stop on the way home to Hannaford for a cold drink. A low calorie Gatoraid G2 grape drink. I wasn’t impressed. It tasted like fake grape flavor. I had a picture of it, but for some reason it won’t rotate from horizontal to vertical. Oh well. I will spare you.

After I got home from running, my sister wanted to go hiking. I was kind of tired, but I thought why not? I already ran 8 miles, why not do a short hike? I will continue with a post about the hike later on. Right now I have to relax and watch some TV…my bed is calling me!
