Home-Made Salsa Verde

Yesterday we got our 15th box of CSA vegetables. Can you believe it’s already been FIFTEEN weeks since we stared? We’ve gotten some delicious things.

This week we got cilantro, onions, tomatillos, tomatoes, garlic, arugula and some beets!

Well, more than half of those ingredients just call for tacos, no?

I decided to make salsa verde for the first time to add to our fish tacos last night! I just googled salsa verde and found a bunch of easy recipes.

It was really easy and it came out tasting GREAT! All of my ingredients for the salsa were 100% local and I felt great about that!

  • Tomatillos
  • Large clove of garlic
  • Large bunch of cilantro
  • 1 medium onion
  • Water (probably didn’t even need it)

I put the tomatillos in a pan on the stove and cooked them on each side until they blackened up and then chopped them, along with the garlic and onion and threw it all in my blender.

I had a bunch left over so I threw it in the freezer for the next time we want tacos or enchiladas. Yum.

And the fish tacos were delicious.
