Good News!

Finally some time to sit down get to blogging! πŸ™‚ I hope everyone’s Monday is going well. I have some good news to share with you guys, but let’s get to today’s eats! This morning for breakfast I had my last savvy scone. Sad face! They were seriously, so good. Julie is an amazing baker! A chocolate strawberry protein smoothie accompanied the scone this morning.

Lunch was leftover veggies, beans and rice from El Mariachi.

Some sweet red cherries.

And a Gnu Bar! Gnu Foods sent me a bunch of different flavors of their bars to try out recently. So far I’ve loved the ones I’ve tried. I will write a full review of the product once I’ve tried all the flavors. Today I had orange cranberry…and it was so orangey (is that a word?) and flavorful! Pretty good tasting for a fiber bar, I must say.

When I got home from work, I knew I had to hop on the treadmill, or else I wouldn’t get a workout in. This week is so jammed packed, I’m not sure when I’m going to get another time to exercise, so I made myself run five miles. Or else! Sometimes that’s just the attitude I use to get myself through a workout. I completed five miles in about 53 minutes, on the treadmill. And I was dripping sweat, literally. I don’t remember ever sweating that much while running! My reward was a goat cheese omelet.

I just used one egg, goat cheese, and 1 slice of double fiber toast. So good! Dessert was one of Becca‘s vegan chocolate chip bars.

And an unpictured small bowl of Edy’s 1/2 the fat Take the Cake ice cream. I needed ice cream after my grueling run! It was motivating me through the miles!

Anyway, here is the news I mentioned earlier. Some of you already know this, but I’ve decided to start taking classes again! πŸ™‚ I’ve realized within the past year or so, that I’m really interested in nutrition (obviously!), so for a while I had been thinking about going back for a Masters in the subject. A week ago I went to an information session at Sage College in Troy, and I got all of the info about it. I have to take a bunch of support courses before I apply, since I don’t have some of the required ones. I registered to take one course at a community college in the fall and I’m super excited about it! I’m going to have to take one course a semester since I work full-time, and it may take me a really long time to get it done, but I feel like I’m doing the right thing this time. It feels right!
