    Birthday Turtle Cheesecake

This is just going to be a quick post tonight. Chris turned 27 today and I wanted to wish him happy birthday. 🙂 Last night I made him a surprise Turtle Cheesecake. I googled “turtle cheesecake recipes” to find this one, and I used it because it looked the tastiest and the easiest. Instead of using full fat cream cheese, I substituted with three tubs of lite cream cheese. I also used fat-free sweetened condensed milk rather than the full fat kind. I tasted the batter and I honestly couldn’t taste a difference! Cheesecake still isn’t the healthiest thing, but Chris told me this was is favorite type of cheesecake, so I…

Long runs, beaches, and chocolate zucchini cupcakes

Things I like to do on my day off: lay on the beach, go for an 8 mile run, and bake chocolate zucchini cupcakes. Not in that order. 😀 This morning I woke up and knew I had to do my long run today, because there was no way I was running that much on the Fourth of July. I have too many plans and a four mile race that morning! I fueled with some peanut butter toast and honey, with some chia seeds sprinkled on top, and a cup of green tea. And I was ready to go. Miles 1 – 4 on treadmill in 44:45. Felt great. Mile…

    Superfood Cookies

I got a package in the mail today!  My order from iherb finally arrived! Last week I ordered Maca Powder, Chia Seeds, and Chocolate Rice Protein from iherb. I’ve been seeing the chia seeds and maca powder all over the blogosphere so I decided to jump on the bandwagon and try them myself. FYI: Maca Powder According to iherb, “Studies have identified four alkaloids present in maca known to nourish the endocrine system. Maca root has been used as a stress-fighting adaptogen to increase stamina, boost libido and combat fatigue. Maca is a nutrient-dense whole food packed with vitamins, plant sterols as well as many essential minerals, fatty and amino…

    Run for Pride 5K

Good morning! This morning I got up bright an early to head into Washington Park to register for the Run for Pride 5k! It is pride week in the Capital Region, and they have a 5K that Chris and I decided to run together. It was our first race that we’ve run together so far! But before I get into that, lets rewind to breakfast. I got up at around 7:30 and had a bagel thin with some Justin’s Almond Butter. It came from one of those cute portable squeeze packs! I also topped one side with half a banana and some blueberry jam. I think this may be my…

    I'm a Baking Fiend!

Evening everyone! I just make the most delicious granola bars! I wore my new Ben & Jerry’s cow apron and I also had someone helping me in the kitchen. He doesn’t like granola bars though, only tuna. Anyway, I used a recipe for “Skinny” Oatmeal Raisin Bars I found at Carrots ‘N Cake. Except I made a few substitutions. Instead of all purpose flour I used whole wheat flour and instead of 1 cup of raisins, I used 1/2 cup of crushed walnuts and 1/2 cup of dark chocolate chips. I can’t bake anything without chocolate chips, apparently. They came out a bit crumbly, but tasted great! Not too sweet.…
