    Birthday Dinner in Hudson

    Last night we celebrated Chris’ birthday by driving down to Hudson after work for dinner. Chris had Mexican on the brain and had been wanting to try Mexican Radio  for a long time! The more I drive through the Hudson Valley the more I love it down there. It has such a different vibe than Albany, like hip-country, or something. I totally just made that term up.     Strawberry White Chocolate Chip Cookies

    They other day strawberries were on sale at Price Chopper for $5 for three pounds…so I stocked up. And then my mom went strawberry picking and gave me these. Needless to say, I am swimming in strawberries! But I’m not complaining because they are my favorite fruit. I wanted to bake something incorporating strawberries so I got down to business searching for recipes that included ingredients I had on hand.     Mountains of Kale and a Pizzelle Party

    Today I had a fabulous day off! I started by being productive in the kitchen at around 8:30 am this morning. On the agenda: soup! I had a huge bunch of kale sitting in my fridge that was calling to be used, or it would have gone bad. I decided on some butternut squash kale soup!     CDNY Eat Drink Blog Cookie Swap

    Just when I think I can’t eat any more cookies, I make six dozen Chocolate Macroon Bars and head to a cookie swap with other local bloggers hosted by Heather. It was amazing.     Celebrations

    This weekend has been filled with celebration! And we’re just getting started! Friday night Chris and I went out with a group of his grad school friends to celebrate his Comp Defense. He passed so we had lots to celebrate! Congrats Chris! We took up two big tables at the Pump Station. I got an Apple Ale–my favorite–to celebrate! For dinner I wanted to get something I haven’t tried before so I went with the Black Bean & Corn Veggie Burger.
