Banana Soft Serve Obsession
The past few days have been HOT! I’ve surprised myself though, and got up earlier than normal to get my runs done in the AM when its not so hot out. 90+ degrees after work = no running for me. So morning running it was! (And I actually wasn’t planning on being so matchy with my outfit, I just really wanted to wear my new visor! Which I love by the way.)
I actually really love running in the morning, but sometimes just would rather stay in bed. I need to make this more of a habit so I can free my weeknights up for relaxation (or even more yoga! yippee!)

So, lately since its been so hot out, I’ve been obsessed with making “banana soft serve”. Its such a healthy and delicious treat disguised as ice cream. People have been asking for the recipe, so here it is!
Ingredients
- 1 sliced banana, frozen
- 2 tbsp of soy milk (or other non-dairy milk)
- 1 tsp of vanilla
Instructions
Put ingredients in food processor (I suppose a blender would work, too!) and process until smooth–the consistency of ice cream. You may need to add more soy milk–I just guessed at the amount I put in. I just add it as I go.
This soft serve is vegan friendly/dairy free.
This is seriously the easiest thing in the world to make! Sometimes I put some chocolate chips in too. Peanut butter would be great on top, also!

I know it’s one of Stefan’s favorites… too hoppy for me though! I think the appeal for him is that it has about twice the alcohol content than regular beer. More bang for your buck I guess!

Chimay was one of the first real beers I tried and definitely the first Belgian beer I ever had. I love it, especially the blue. And yes, they have nice high alcohol contents but also a really deep aroma and lots of history behind them since they’re Trappist.

I love banana soft serve! I saw it at a weight watchers meeting last year and have been freezing bananas ever since. Sometimes I put a little fat free cool whip on top too. I do nto add the milk of vanilla though, I may have to try that. I just eat it plain.

Banana soft serve is soo good! I recently went to this place called Bowl of Heaven where they make you any kind of soft serve – I had a berry fruit blend with banana, coconut, and honey – it was beyond amazing!
