Fourth of July 2010 – Part 1: Pig Roast

Holy crap, what a busy weekend! I was so busy, in fact, I have to split this weekend’s post into two different parts! Hope everyone else had a fantastic fourth of July! I know I did! 😀

Saturday, my family and I were invited to a Pig Roast/BBQ Cookout to celebrate July 4th. It was a huge party, with 80+ people attending! The party was at my cousins’ house and they had a whole tiki theme going on, which was so cute! And they had tons of food, like you wouldn’t believe. The main attraction was a whole pig on a spit, but since I don’t eat meat, I didn’t bother taking any pictures of it. I could barely look at it!! But needless to say, it was rather impressive.

Before we get into the pig roast, lets rewind a bit. Early Saturday I started my day off with some blueberry Chobani and raw oats.

Then my friend Brendan and I went for a 12 mile bike ride! It was a nice, scenic ride! 12 miles is the longest I’ve ridden on a bike before, so I was happy about that! It wasn’t too bad, and I felt great. 🙂

I came back for a post bike ride snack of a banana covered with dark chocolate dreams peanut butter! They say if you are trying to watch what you eat, never go to a party starving! You will eat everything in sight!

I also drank another one of these delicious coconut waters!

After my ride, I got ready and went to pick up Chris, since he was coming to the pig roast with me! When we got there we headed straight for the appetizers! There was SO much to choose from. I stuck with FRUIT!!! The fruit was glorious. There was had tons of fruit salad, watermelon, strawberries and blueberries! And a delicious fruit dip, which is the white blob on my plate.

I stuck mainly to fruit until the real food came out. I also tried some fresh caught catfish. It was actually really good!! I ate of the catfish and an ear of corn, since I was kind of saving myself for the dessert table.

There were desserts galore…I may have went a bit overboard and had a couple of butterscotch magic bars, a cupcake, and a few cookies and brownie. But hello…July Fourth only comes once a year! I try to save my calories for dessert! 🙂

But main attraction was the pig. It had been roasting since 5AM!  That’s 12 hours of cooking! I didn’t try it, but Chris said it tasted amazing.

After dinner, my sister, Brendan, Chris and I hung out by the pool!!

The pool was fun and refreshing, since it was such a hot day!

I also had 2 glasses of homemade red and white sangria! My favorite!

Overall, it was an awesome barbecue! It was such a great way to celebrate the July 4th weekend: with Family, Friends, Food, and Fun! 🙂
