Flexible Vegetarian
The keynote speaker at the Healthy Living Summit this past weekend was Dawn Jackson Blatner, the author of “The Flexitarian Diet“. Her presentation was very good, and even though the information wasn’t necessarily new to me, I really believe in the idea of being a “flexitarian” and how beneficial to your health eating a plant-based diet is. Dawn Jackson Blatner summarized the Flexible Vegetarian as someone who… Minimizes meat but doesn’t exclude it Wakes up with the intention to be more vegetarian Eats a diet that is pro-plans but not anti-meat Essentially, I am a flexitarian because I eliminate almost all meat from my diet. This is the last of the Heathy Living Summit recaps! So if you’re just checking in, here are my previous HLS posts: Conference Day Cocktails at Reading Terminal Market Vegetarian Chicken Cheese Steak and Froyo Food and Philly —- I have never seen any of the Rocky movies, but that doesn’t mean I can’t climb up the Rocky Steps just like in the film! Conference Day
Saturday was the the conference portion of the Healthy Living Summit! But before we could learn all we could about blogging, my roommate Liz and I had planned on running the 5AM long run with a group of other bloggers (like 20 of us!) I was planning on 10 miles but didn’t make it. I turned around at mile 4.2 because my stomach started hurting and ran/walk the rest of the way back…after nearly getting lost! Fortunately I called Heather and met her and Alicia (they were running with a 6AM group) and they came to my rescue. Thankfully we had about an hour to get ready before breakfast at…

Cocktails at Reading Terminal Market
One of the coolest things that happened this weekend was going to the Healthy Living Summit cocktail party at Reading Terminal Market in Philadelphia. The place was closed, but they had food and drink tables set up for us to enjoy some drinks and mingle with the other bloggers. We got two free drink tickets, so I got a white wine to start off with. There was this cool photoboard with pictures of all the HLS attendees that someone had made, it was cute. Can you spot me? The spread of food was pretty decent. There was a delicious goat cheese & caramelized onion pizza that was to die for!…
