    What a beautiful weekend we had here…it was pretty exciting. Friday night I celebrated my birthday with some friends at El Mariachi. It was such a gorgeous night! I was hoping to be out on the patio but we weren’t, it was still fun though!  The margaritas are amazing at El Mariachi. I ordered the Enchiladas el Mariachi, my favoriteeee dish from here. So glad I got to celebrate with such good friends. Sadly my sister and her boyfriend were absent since they had a wedding to go to in PORTLAND, OR. (I am so jealous!)     Have I ever mentioned on this blog that I loathe chain restaurants? I highly dislike eating at chains (I won’t name names, but I really don’t like most of them), so whenever I go out to eat you can find me at a local establishment.     The fiber bars that I usually find in stores that have this amount of calories usually have tons of additives and ingredients I cannot pronounce, so Gnu fiber bars were just what I was looking for....     A Sangria Type of Evening

    Yesterday started out pretty basic. I made a green monster! But instead it looked more like a brown monster with flecks of green. I actually liked it this time! The past couple times I’ve made these tasted pretty bad. In my GM went: 1 cup of spinach 1/2 cup of light soy milk 3 frozen strawberries and 2 slices of frozen papayas 1 extremely ripe banana 1 tsp of almond butter It was refreshing.
