    High Fiber Bran Muffins

    So, dinner last night was something new. I decided to try Morning Star Farms’ New Turk’y Burger. It was pretty tasty! I think I may like the chic’n patties better though. I had the burger on two ends of whole wheat bread, toasted, with arugula, herb goat cheese and roasted red peppers. (Noting a trend with these three ingredients? They are in ALL my meals lately!) I also had a side of corn and mashed potatoes.     First Annual SPAC Rock & Run 5K

    Well, I have another 5K under my belt! My fourth race total and my third 5K! Today’s 5K was held at the Saratoga Performing Arts Center, which is part of the Saratoga State Park and it is really gorgeous! To get ready for this race I made a small dinner last night, a roasted red pepper, arugula and herb goat cheese sandwich. It was pretty tasty.     2010 CDPHP Workforce Team Challenge

    It finally came and went! My first race of 2010! And my first time running the 3.5 mile CDPHP Workforce Team Challenge. At 4:45 I went and changed into my running clothes and then packed up my things and headed out to my car to drop them off. I found some of my team members and walked up to the meeting spot with them! They were really nice. I thought it was interesting that I really didn’t know anyone on my team and I was one of the youngest members!     Getting Ready

    So, tomorrow is my first race of 2010! I’m excited and little bit nervous. I made a really good dinner tonight! A roasted red pepper and green bean quesadilla. With sauteed green beans on the side! A pretty good concoction if I do say so myself. It was yummy. For dessert I had a couple scoops of my mom’s home made strawberry rhubarb crumble.     Pizza and Wine

    So, tonight I was in the mood for some pizza, but not the UNHEALTHY kind, so I made up a couple of pita pizzas for dinner. I remember this idea from when my mom was on Weight Watchers years ago, and she used to make mini pizzas with pita bread for the crust. I started doing the same thing when I began eating healthier. I use Joseph’s Whole Wheat & Flax Pitas for the crust, plain pizza sauce, and low-moisture part skim mozzarella cheese. I topped them with some red pepper and sundried tomato. So yummy!
