    Don’t Fear the Tofu

So, tonight Chris and I made tofu for the first time ever!! Teriyaki tofu to be exact! And it actually came out pretty good! Anyway, Chris and I first went for a six mile run around Albany…I like to call this route the Tour de Albany, since we ran around Washington Park and then down past Lark Street to the Empire State Plaza. It was just getting dark when we got to the plaza, and the towers were lit up, so it looked pretty neat. Its at a moment like that where I do appreciate this city. I just wish I had my camera on me to get a shot.…

    Pumpkin Pie Steel-Cut Oats

Last night I was on a roll in the kitchen and whipped up a big batch of Steel-Cut Oats, Irish Style, for the week! (Wondering what steel-cut oats are? Check out my previous post all about oats.) They are really super easy to make and much more creamier than rolled oats. Since I wasn’t a huge fan of pure pumpkin in my oats (gasp!), I tried pumpkin butter, and it was amazing!! Pumpkin Pie Steel-Cut Oats Ingredients 1/4 cup of steel-cut oats, already prepared according to package 1 TBSP of pumpkin butter 1/2 banana, mashed (optional, you could add in a nut butter instead) 1 TBSP of chopped pecans Sprinkle…

    A Lazy Sunday

Actually, I most of my Sunday was lazy…minus my eight mile run! I woke up  yesterday morning and had my Trader Joe’s goods on the brain. Especially the pumpkin butter. I had to have more TJ’s cinnamon raisin bread as well…so breakfast and pre-run fuel was cinnamon raisin toast, slathered with TJ’s almond butter and pumpkin butter, with a banana. I ended up taking the banana off, since for some reason the texture of a banana on toast has been bothering me. Weird? Yes. I can eat the banana alone just fine… After waiting a few hours for my meal to digest, I headed out for an eight mile run. It felt good to…

    An Update!

I’m back!!! Last night I had my first college exam in oh, about three years? Maybe more? I think I did fairly well, but I guess I will find out next week! When I got home I just wanted to chill out and relax. Unfortunately, this week I have not been taking many photos so today I’m just going do a quick update. Wednesday night Chris and I were planning on going to the gym, but after stepping outside I realized it was way too nice out to be inside working out. We ended up running around Albany after work. I had wanted to do 5-6 miles, just to see…
