Today was the first time I took my bike out in almost 9 months! The last time I rode was the Tour de Habitat back in September. I keep telling myself I’m going to ride, but never do! Today I finally did.

Chris and I took a little ride throughout Albany, it was really fun and quite the workout!
We made a stop at Buckingham Pond and saw lots of ducks and geese.


We biked 14 miles total! I was impressed with myself, but I was pretty tired by the end. It was lunchtime when we got back, so I decided to make some coconut curry chickpea burgers that I saw on Pinterest.


I was a big fan! The burgers were so flavorful and delicious. I also roasted some beets from our CSA to go with the burgers. We sliced the beets up, laid them out on a baking sheet, sprayed them with some cooking spray and baked them in the oven. Delish! I love beets.
I spent the rest of the day hanging out a the pool with my friend Caitlyn, then we went to Target. It was a pretty relaxing day!
